Pesach commemorates the Exodus from Egypt, eight days everywhere outside Israel and seven inside it. The seder on the first night or two retells the story with a set order of foods and readings, and for the rest of the holiday you avoid chametz, leavened bread and anything made with it. Every household has its own line on how strict that gets, and every family argues about it a little.
